Serves: 3
You Will Need:
3 Normal sized potatoes peeled.
3 leeks chopped, washed & peeled.
2 vegetable stock cubes
Method:
In a saucepan put the potatoes and leeks in. Add in the x/o cubes broken up and water to the saucepan and then season well. Now leave on the heat until the potatoes & leeks have dissolved. When dissolved with a food blender blend until like soup and that there are no lumps. It is now ready to serve!
Tip:
Serve with some fresh brown bread or mini rolls and put some cream on top!
