Lemon Drizzle Cake

These are great for party's, having friends over or giving yourself a treat!

You Will Need:
             Cake                                                                         Icing
  • 225g Caster Sugar                                           *200g  Sugar
  • 250g Self Raising Flour                                  * Juice of 2 1/2  lemon
  • 1 tsp Baking Powder                                       * Zest of 1 Lemon
  • 4 large eggs
  • 225g Butter (at room temp.)
  • 3 tbsp milk
  • Zest of 3 lemons
Method:
  1. Method:
    1)      Wash and grate 3 lemons.
    2)      Pre-heat the oven to 160oC/Gas mark 3
    3)      Sieve the flour and baking powder into a mixing bowl.
    4)      Add the sugar to this bowl and make a well in the centre.
    5)      Juice ½ a lemon into a cup and add to the bowl
    6)      Cube and add the butter into the bowl.
    7)      Add the eggs and the zest into the bowl and mix until fully combined.
    8)      Line your tray with baking paper/parchment paper and pour your mixture on to the tray.
    9)      Smoothen and bring all the mixture to the sides.
    10)  Bake in the oven for 25-30 minutes.
    11)  For the icing, juice and grate the lemons and combine by hand.
    12)  Once the cake has cooled out of the oven, make some lines in the top of the cake for the juice to soak through.
    13)  Pour the sugar on the top of the cake roughly and pour the juice on top of the sugar.
    14)  Cut into cubes and serve!
